Ingredients

ripe alphonso mangoes

paneer or homemade chhana
mashed

plain flour

sugar
powdered, to taste

unsalted butter

Instructions
Pre-heat the oven at 160C.
Puree the mangoes and keep aside.
Take butter in a bowl. Add the eggs, one by one, beat till light and fluffy.
Now add in the chhana, powdered sugar and plain flour, beat till thoroughly mixed.
Fold the mango puree into the batter.
Grease the ramekins with butter, pour the batter into the ramekins till they are about two-thirds full.
Bake for 20 minutes. Or till a skewer inserted into the pudding comes out clean.
Serve hot or cold.
