Thakurbarir Mango Pudding

A mellifluous symphony of luscious mangoes and pristine homemade chhana. Baked to splendid perfection. Sublime !!!!

Ingredients
  

  • 4 ripe alphonso mangoes
  • 150 g paneer or homemade chhana mashed
  • 1 tbsp plain flour
  • 4 eggs
  • sugar powdered, to taste
  • 75 g unsalted butter soft, melted
  • butter for greasing

Instructions
 

  • Pre-heat the oven at 160C.
  • Puree the mangoes and keep aside.
  • Take butter in a bowl. Add the eggs, one by one, beat till light and fluffy.
  • Now add in the chhana, powdered sugar and plain flour, beat till thoroughly mixed.
  • Fold the mango puree into the batter.
  • Grease the ramekins with butter, pour the batter into the ramekins till they are about two-thirds full.
  • Bake for 20 minutes. Or till a skewer inserted into the pudding comes out clean.
  • Serve hot or cold.
