Koraishutir Patishapta (Savoury Crepes with Spicy Green Peas Stuffing)

Ingredients
  

For the Stuffing

  • 1.5 cup fresh green peas
  • 2 tsp ginger paste
  • 4-5 green chilies finely chopped
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • a pinch of asafoetida or hing
  • 1 tsp Bengali bhaja masala
  • 1.5 tbsp mustard oil
  • salt to taste

For the batter

  • 1 cup plain flour
  • 1/2 cup suji or semolina
  • 1 cup milk
  • 1/2 tsp a pinch of salt
  • oil for cooking

Instructions
 

For the Stuffing

  • Grind the fresh green peas and chillies to a coarse paste.
  • Heat the oil in a pan, when smoking hot, throw in the cumin seeds and hing, allow the spices to splutter. Now add the ginger paste, saute for a minute or two.
  • Add the green pea paste, turmeric powder along with a sprinkle of salt, cook for 7-10 minutes over a low flame till the peas are cooked.
  • Adjust seasonings. Finish with a hearty sprinkle of bhaja masala. Allow to cool to room temperature.

For the Batter

  • Mix the plain flour, semolina and salt in a mixing bowl. Add the milk and a little water to make a smooth medium thick batter, taking care there are no lumps.
  • Keep aside for 30 minutes.

Assembling the Koriashutir Patishapta

  • Heat a frying pan over medium heat, brush with very little oil.
  • Give the batter a hearty stir.
  • Pour 11/2 small ladle full of batter onto the middle of the pan, spread it evenly around the pan by rotating it. (This needs to be done real quick before the batter begins to set.) Cook till the batter just begins to set.
  • Place the koraishuti filling lengthwise along the crepe and gently fold the crepe. Cook for another 3-4 minutes.
  • Serve hot with kasundi.
