I place my palm in front of her. She gives me a fr

I place my palm in front of her. She gives me a frown, a-frown-thats-really-not-a-frown, picks up a couple of moong dal grains, now speckled with tiny dots of brown on the pale yellow, with her deft fingers, from the scalding heat of the kadai (how does she manage to not singe her fingers ? my bewildered mind asks), blows onto them to pacify the heat and places the roasted dal on my still outstretched palm.
The dal disappears in a jiffy.
And I am back with a stretched palm again.

Maa gives me a frown again, this time a-frown-thats-actually-a-frown, I cower behind her, tugging her saree aanchal and repeat along with her – You know what happens when you eat too much of this, don’t you ? You get a bad stomach ache.

Maa now pours cold water onto the now-brown dal, the sizzling sound, as the cold splashes on the red hot, is music to my ecstatic ears.
Maa I want that sound again, I entreat, and then repeat the answer along with her – You won’t get that again.
This is the story of Maa and me, everytime she made her delicious bhaja moong dal.

Gorgeous Ilish steaks. A slather of piquant mustard. A generous glug of mustard oil. A throw of wicked green chillies. All snugly packed in an old-school stainless steel tiffin-box and steamed to perfection.
(And that intoxicating aroma when you prise open the lid of the box. What a delight for the olfactory nerves !!)
This is food heaven !!!

We Bengalis relish our Bhapas, don’t we ? And wh

We Bengalis relish our Bhapas, don’t we ?
And what an eclectic collection of bhapas to flaunt and relish !!!

The gorgeous Ilish wrapped in lau pata. And steamed lazily to perfection.
Or the delicate bhetki smothered in ginger and coriander paste. And cooked languorously over a furiously boiling pot of water.
Or the quintessential Bengali Chana Bhapa, pristine homemade chhana caressed with the sweetness of grated coconut and the piquant zing of mustard, drizzled with mustard oil and cooked on bhape.
Not to forget, Grandma’s Nolen Gurer Bhapa Sandesh, a mellifluous symphony of chhana and Nolen Gur, steamed to a sublime ecstasy.

But this morning, chilly and grey, the sun deciding to play truant and the wind in a frolic, I yearn for fire, something sinfully spicy.
And a lonka bhapa murgi it is that I decide to cook.
