Koraishutir Sandesh (Cottage Cheese and Green Peas Fudge)
Koraishutir Sandesh. A mellifluous symphony of chhana and green peas. The perfume of nolen gur. The warmth of grated ginger. Some pepper just for that kick.

  1. Place the chhana on a flat surface and knead it with the heel of your palm. About 4-5 minutes or so till your palm is almost oily. Keep aside.
  2. Heat the ghee in a deep bottomed pan, add the coarsely ground green peas, cook for 5-7 minutes over a low flame, stirring occasionally.
  3. Add the chhana to the peas. Mix well with a wooden spatula.
  4. Now add the jaggery, grated ginger and ground black pepper. Give it a hearty stir.
  5. Continue to cook till the mixture comes comes off clean from the sides of the pan.
  6. Finish with chopped almonds and pistachios, mix well.
  7. Grease a flat dish with very little ghee. Gently spread the green peas and chhana mixture on the dish, about 3/4 inch in thickness.
  8. Using a sharp knife, cut into 1 inch squares.
  9. Refrigerate for 30 odd minutes or so and serve.
